Happy National Margarita Day!
To kickoff the weekend, I wanted to share three ceviche recipes from my private cooking class with Alexander Branch, the Executive Chef at Capella Ixtapa. (Ixtapa, Mexico)
He took me to the local market and showed me exactly what we needed to prepare for these delicious, fresh ceviches. These recipes are made for two people. Enjoy! Make sure you drink a margarita with these.
Shrimp “Guatemala” Ceviche
Ingredients:
Shrimp (depending on the size you choose)
Green Chili (depending on how spicy you choose)
Avoc½ piece Tomato 1 piece
Orange Wedges 1 Piece White onion 1/2 piece
Cilantro 4 TBLSP
Olive Oil, Salt, Pepper, Lime Juice
Method:
1) Cut the Shrimp to desired size and poach with salt water and then shock in ice water.
2) Mix in the chopped onion, chopped chili, chopped tomatoes and the lime juice; mix in the shrimp and citrus wedges with the juice of the orange.
3) Add olive oil, salt and pepper to taste, then mix in diced avocado and freshly sliced cilantro, mix well
4) Serve with some tortilla chips and serve well chilled.
Shrimp Acapulco Ceviche
Ingredients:
Shrimp (depending on the size you choose)
Green Chili (depending on how spicy you choose)
Tomato 1 pz
Onion 1 pz
Cocktail Sauce 2 TBLSP
Pitted Olives 8 Pz
Olive Oil, Salt, Pepper, Lemon Juice
Method:
1) Clean the shrimp by removing the shell and the back vein, then poach the shrimp for 3 minutes in boiling water with enough salt and the juice of one lime. You can also cut the shrimp raw and cook it in lime juice for 1 hour.
2) With the pre cooked shrimp, add the sliced green chili, Zest from one orange, Sliced onion, diced tomato, salt, pepper, lemon juice and olive oil.
3) Mix well and add the cocktail sauce and some pitted green olives
4) Garnish with some diced or sliced avocado and some thin cuts of Radish, finish with a fresh cilantro leaf.
Fish Tiritas
Ingredients:
Fresh Fish (depending on the size you choose)
Green Chili (depending on how spicy you choose)
Red Onion 1 piece
Cilantro 1 bunch
Lime Juice 6 oz
Olive Oil, Salt, Pepper, Lime Juice
Method:
1) Cut the Fish in thin slices and marinate with enough lime juice to cover it fully.
2) Sieve the lime juice from the fish and mix in the sliced onion, chopped chili, Add olive oil, salt and pepper to taste, then mix in freshly sliced cilantro, mix well
3) Serve with some tortilla chips and serve well chilled.
